Stairways from heaven

Imagine a bakery in Brooklyn that is open 24 hours a day, 365 days a year, and requires only a week’s notice to make a multi-layered, impeccably decorated wedding cake.

Now, imagine the owner says that depending on the size of the wedding party, her cakes start at $20.

If this sounds like a dream, then hop on the R train and head to Angel’s, on 41st Street and Fifth Avenue, and find a dream come true.

Josie Camarillo, the owner of Angel’s, estimates that she makes “over 200 wedding cakes a year.” She trained as a baker in Mexico, her husband (and co-owner), in Guatemala. Together, they have been delighting brides in Sunset Park with their creations for more than 15 years.

For the last year, they have operated out of Angel’s, along with two other bakers from Puebla, a region of central Mexico.

On any given night, their storefront is likely to have on display dazzling wedding confections made up of multiple cakes connected by delicate bridges, all decorated with icing flowers, candy wedding bells, and intricate systems of lights — as well as numerous other types of cakes, pastries and baked goods.

When asked what kind of cake they specialize in, Josie responds “una mescla” (a variety) of American-style wedding cakes and traditional Mexican cakes (called “torta de bodas”). Mexican cakes, traditionally, are either tropical fruit cakes soaked in rum, or “tres leches,” or “three milks,” so called for the three types of milk (evaporated, condensed, and cream) that give these cakes their rich taste and moist smoothness.
